At the helm is Chef Sébastien Beline, who grew up immersed in his family's fourth-generation chocolate shop in Le Mans, France, and later honed his craft at the legendary Ladurée in Paris. He still shaves ingredients and hand-tempers chocolate in small batches, using fine couverture and time-honored technique for a smooth, refined taste.
